Who said you had to follow a recipe for tacos?
Really, just use what you have and throw it in. Top the taco with your favorite taco sauce and there you go – that’s lunch. As much I love following new recipes, sometimes it just makes sense to use what you already have.
And that’s exactly what I did for this recipe. I took a peek into my pantry and my freezer and gathered up all the things I love.

My Favorite Tortillas
I am not very picky – I’ll grab whatever taco tortilla that I find will be a good deal. But, hands down my favorite are the carb balance tortillas from Mission. It’s filling, soft, and delicious.
How To Make Walnut Meat
To make walnut meat, you only need soaked (20 minutes) raw walnuts, soy sauce, dry basil, smoked paprika, and garlic powder. Pulse everything together until you get a meat-like texture.

Use What You Have Tacos
- 1 flour tortilla
- 1/4 cup cooked black beans
- 1/4 cup chopped onion
- 1/4 cup cooked corn
- 1/2 whole green pepper sliced
- 1/4 cup walnut meat
- Taco sauce
- In a skillet over medium heat, warm the flour tortillas for 10 seconds on each side
- To assemble the taco, top with black beans, chopped onion, corn, green bell pepper, walnut meat, taco sauce
