Puerto Rican Tofu Guisado (Tofu Stew)
Toss tofu chunks with oil, spices, flour/cornstarch. Bake or air fry tofu chunks until golden. Set aside. Heat a large pot. Add oil and sofrito mix. Cook for a minute.
Add water, potatoes, carrots, bay leaf. Bring stew to a boil, then lower to a simmer. Cook for 20 minutes. Add the tofu chunks and cook for another 5 minutes.
