Vegan Puerto Rican Picadillo


Warm up the oil in a non-stick pan over medium heat. Add the sofrito mix to the pan. Saute for 1 minute. Add the green olives & bay leaf.


Add vegan ground beef, potato & water. Simmer and cover with a lid. Cook until potatoes are fork-tender. Once potatoes are tender, remove the lid from the pan and turn off the heat. Simmer for another 2 minutes to thicken.
