This oil-free, breakfast mushroom avocado toast might look complicated, but we’re only dealing with just a handful of ingredients - 6 to exact. We’re going oil-free by pan “frying” the sliced mushrooms on a slick non-stick pan and a pour of soy sauce.
Place a non-stick pan over medium heat. Once hot, add the sliced mushrooms.
Pour low-sodium soy sauce and cracked black pepper over the mushrooms. Cook the mushrooms until their water has been cooked off and they have golden bits.
Meanwhile, toast the two slices of bread. Then, cut open the avocado fruit. Scoop out the avocado and smash lightly with a fork. Add salt to taste.
Place the two slices of toast onto a plate and add a thick layer of smashed avocado. Then, assemble the cooked mushroom slices. Top the mushroom avocado toast with salt and pepper to taste, along with other spices you enjoy.
