Now that we have our cheap food essentials, it’s time crank up the oven and cook up crispy baked potato wedges.
Potatoes are one of the more affordable and long-lasting vegetables you can keep around in your kitchen. Besides, they are great candidates for snack time.
I can personally go through pounds of potatoes in just a week, just because they are so versatile. They can be used in a stew, in a Puerto Rican-inspired dish, or in a salad (yes, I said salad).
My favorite way of having potatoes is cut into wedges and roasted under high heat to get a tender and airy inside and crispy, golden outside. With a side of ketchup, vegan cheese dip, creamy garlic dressing, or hot sauce, I am all set.
If you want to make a full meal, have a side of vegetarian chili with those potato wedges.
Let’s rip open that big bag of potatoes and snack on something good today.
How To Make Potato Wedges Crispy
Use Parchment Paper
If you’re not using a baking rack, lay your wedges on a baking sheet lined with parchment paper. Parchment paper will prevent sticking and will help with crisping up the wedges.
Pat Dry Potato Wedges
To reduce steam, pat dry the potato wedges after soaking them in cold water.
Add Space Between Wedges
Be sure to add space between the wedges to allow the steam to escape. This means you want the wedges to be laid in a single layer, in addition to spacing them apart.
Use A Baking Rack
This helps a lot, but if you don’t have one - totally understandable. However, a baking rack helps with air circulation and prevent the wedges from absorbing the steam, which can create a not-so-crispy fry.
Soak In Cold Water
Soaking the wedges in cold water helps with removing excess starch on the wedge’s surface. Getting rid of the excess starch helps with preventing a “rubbery” potato wedge outcome.
To soak the wedges, grab a large bowl and fill with cold water. You can even add some ice to drop the temperature of the water even further. Let it sit in the water for about a minute. Pour out the water and replace with fresh cold water. Repeat until the water is no longer cloudy from the starch.
What Seasonings To Use For Potato Wedges
To season your potato wedges, nothing is really off the tables. It depends on what you enjoy.
Personally, I am a huge fan of garlic powder, smoked paprika, and cracked black pepper. So those are my go-to spices for just about anything, including crispy potato wedges.

- Onion powder
- Smoked paprika
- Cayenne pepper
- Black pepper
- Garam masala
- Sazon
- Salt
- Cumin
- Chili powder
- Curry
- Oregano
How To Cut Potato Wedges
- After washing and scrubbing your potatoes, grab a chopping board and lay it over a counter.
- Next, set the potato on its side and cut it lengthwise
- With the cut half of the potato, cut into quarters.
- If you want your wedges crispier and thinner, cut those wedges in half
What If I Don’t Have Special Equipment Like A Baking Rack?
For this recipe, we’ll be using what most of us already have in our kitchens: a baking sheet and parchment paper.
You may use the additional equipment mentioned above if you have it, but if you don’t, we can still make delicious crispy baked potato wedges with what we have on hand.
Crispy Baked Potato Wedges
Ingredients
- 2 medium-sized russet potatoes
- ¼ cup canola/vegetable oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon salt
- Black cracked pepper optional
Instructions
- Preheat oven to 400 F degrees
- After washing and scrubbing your potatoes, grab a chopping board and lay it over a counter.
- Next, set the potato on its side and cut it lengthwise. With the cut half of the potaoto, cut into quarters.
- Now, we'll soak the potatoes. Grab a large bowl and fill with cold water. You can even add some ice to drop the temperature of the water even fruther.
- Allow the wedges to sit in the water for a minute. Pour out the water and replace with fresh cold water. Repeat until water is no longer cloudy from the starch.
- Drain the water from the potatoes. Pat dry each wedge with a paper towel or a clean reusable towel. Get them as dry as possible.
- In a bowl, mix the oil and seasonings Toss each wedge in the oil and seasoning mixture, or using a basting brush.
- Place each wedge onto baking sheet lined with parchment paper. Bake for 35 minutes, flipping halfway.
