I don’t always have salad, but when I do, I like to make it extra special. A bed of greens is great, but there has to be more to it, for me to really enjoy it. Therefore, we're going with a refreshing Cucumber Tomato Onion salad with homemade vinaigrette!
This summer chopped salad can be enjoyed as-is, or added to a main or another side. Serve with your favorite mains and sides, mine includes a breakfast tofu scramble, Puerto Rican rice, and a simple green salad.

Ingredients & Substitutions
- Cucumber: We used regular cucumber. However, English cucumbers are a great option since they have thinner flesh and fewer seeds. Either way, we left the peel on.
- Tomatoes: Although we used ripe Roma tomatoes due to their sweetness and low cost, other tomato varieties work great in this salad recipe, too. Try it out with cherry or heirloom tomatoes.
- Onion: Red onions are a must! They have the perfect flavor for this salad.
- Parsley: Herbs will seal the deal on this salad recipe. Basil, dill, and mint can also be used.
- Apple cider vinaigrette salad dressing: We’re using our homemade vinaigrette made with extra-virgin olive oil, apple cider vinegar, honey, dijon mustard, and garlic.
- Salt & pepper to taste
How To Make Cucumber Salad With Tomatoes and Onion
This recipe is insanely easy to make! The “hard” part is chopping all of your vegetables. I prefer to go with smaller pieces, so I have all of the flavors incorporated with every bite.
- Add the chopped cucumber, tomatoes, onion, fresh herbs, salt & pepper into a large bowl.
- Pour the homemade apple cider vinaigrette salad dressing over the salad, along with the salt and pepper. Toss.
Then, you’re done. It’s best served chilled, so I recommend covering the bowl and refrigerating it for at least a couple hours, or overnight.

What is the best way to cut cucumber for salad
- First, remove the ends from the cucumber.
- Then, cut the cucumber in half, lengthwise.
- Lay the halves flat and cut them into half-moon/half-circle pieces.
Can This Cucumber Salad Be Made In Advanced
Yep! And it’s even better that way. It can be served right away, but having it sit in the fridge for a few hours will allow the vinaigrette to mingle with the rest of the ingredients.
Should Cucumbers Be Peeled for Salads
It is 100% up to you if you want to leave the peels on. I decided to leave the peels on for fiber and to reduce any food waste. However, if you decide to remove the peels, that’s fine too. If you’re using English cucumbers, their flesh is thin enough to not need to have them peeled.
How To Store
This chopped cucumber salad may be stored for leftovers! Store the salad in an airtight container or reusable silicone bag for up to 2-3 days in the refrigerator.

Refreshing Cucumber Tomato Onion Salad with Homemade Vinaigrette
Ingredients
- 1 large cucumber chopped into small chunks (330 grams)
- 6 Roma tomatoes chopped into small chunks (1 pound)
- 1 red onion chopped
- Fresh parsley washed, stems removed, finely chopped (21 grams/75 ounces)
- ¼ cup apple cider vinaigrette salad dressing
- Salt & pepper to taste
Instructions
- Transfer chopped cucumber, tomatoes, onion, fresh parsley, salt & pepper into a large bowl. Combine well.
- Pour the homemade apple cider vinaigrette salad dressing over the salad, along with the salt and pepper. Toss.
- Serve immediately, or allow to chill for a couple of hours before serving.
Notes
- English cucumbers may also be used.
